Yield: 8-10 Scones
1/2 Cup of Vita-Pakt #127 Orange Juice
(1 part concentrate and 4 parts water)
1/4 cup buttermilk
1 large egg
1/2 tsp almond extract
3 cups unbleached flour
4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
8 Tbls cold butter
1/2 cup sugar or Splenda baking substitute
1/2 to 3/4 cup almonds, finely chopped
1 Tbl of Vita-Pakt #1ss Orange Zest (Fine Peel)
1/3 cup of Vita-Pakt #147 Orange Flavedo
In a small bowl, beat orange juice, buttermilk, egg and extract until smooth. In a large bowl, combine flour, baking powder, baking soda and salt until well mixed.
Cut in butter with a pastry blender until mixture looks like fine sized peas. Add sugar, almonds, Flavedo and orange zest and toss to combine evenly.
Using a fork, stir in egg mixture to form a soft dough. Turn out dough onto a floured board. Knead several times just until well mixed. Shape 8-10 slightly flattened rounds.
Bake in 375 degree oven for about 20 minutes or until browned.
